Feel Good Yogi Bowl

For those who need a break from recent holiday indulgences full of sugar and fat, you came to the right place. There are times when our bodies crave healthy dishes in need of a detox and recharge. For those days when I am craving something meatless or a simply a feel good meal, I look to this yogi bowl by @erikaelizabethnutrition.
Ingredients and Directions (makes two bowls)
- Preheat oven to 400℉
- Chop sweet potatoes into 1 inch cubes, mix with 1 tbsp. of olive oil and place on a greased baking sheet
- Bake sweet potatoes for 25-30 minutes until tender
- Mix quinoa and vegetable broth in a medium sized pot and bring to a boil on medium heat
- Reduce heat to simmer and cover for about 15 minutes or until all liquid is absorbed
- Chop kale into bite sized pieces and transfer to a mixing bowl
- Massage the kale with olive oil, lemon juice, and salt (this breaks down the kale, making it easier for our bodies to digest)
- Divide kale equally into two separate bowls
- Top each bowl with the roasted sweet potatoes and 1/2 an avocado
- Optional: top with fermented vegetables and top each with 1 heaping tbsp. of nutritional yeast
- 1/2 cup quinoa, dry
- 1 cup vegetable broth
- 6-8 large leaves kale
- 2 tbsp. olive oil
- 1 tbsp. lemon juice
- 1 tsp. sea salt
- 1 medium sweet potato
- 1 avocado
- 2 heaping tbsp. nutritional yeast (optional)
- 1/2 cup fermented vegetables of choice (optional)
