Feel Good Yogi Bowl

By: Annie Farley

For those who need a break from recent holiday indulgences full of sugar and fat, you came to the right place. There are times when our bodies crave healthy dishes in need of a detox and recharge. For those days when I am craving something meatless or a simply a feel good meal, I look to this yogi bowl by @erikaelizabethnutrition.

Ingredients and Directions (makes two bowls)

  • Preheat oven to 400℉
  • Chop sweet potatoes into 1 inch cubes, mix with 1 tbsp. of olive oil and place on a greased baking sheet
  • Bake sweet potatoes for 25-30 minutes until tender
  • Mix quinoa and vegetable broth in a medium sized pot and bring to a boil on medium heat
  • Reduce heat to simmer and cover for about 15 minutes or until all liquid is absorbed
  • Chop kale into bite sized pieces and transfer to a mixing bowl
  • Massage the kale with olive oil, lemon juice, and salt (this breaks down the kale, making it easier for our bodies to digest)
  • Divide kale equally into two separate bowls
  • Top each bowl with the roasted sweet potatoes and 1/2 an avocado
  • Optional: top with fermented vegetables and top each with 1 heaping tbsp. of nutritional yeast
  • 1/2 cup quinoa, dry
  • 1 cup vegetable broth
  • 6-8 large leaves kale
  • 2 tbsp. olive oil
  • 1 tbsp. lemon juice
  • 1 tsp. sea salt
  • 1 medium sweet potato
  • 1 avocado
  • 2 heaping tbsp. nutritional yeast (optional)
